From Ohio roots to Florida kitchens, Chef Brendon York has always felt most at home behind the line. An Ohio native, Brendon grew up around food and found early work in kitchens of every shape and size. Neighborhood bars, high volume corporate dining, private events for yacht crews and celebrities, and craft cocktail programs ranging from dive-bar classics to elevated, small format gatherings. The variety sharpened his palate and taught him what matters most. Clean ingredients, balance, and repeatable technique.
After studying and cooking in Pittsburgh, Brendon headed south to Florida for a more relaxed pace and tighter control over menus and sourcing. Late nights experimenting after service turning “staff meal” into thoughtful plates sparked a ritual. Dialing in sauces that could lift a dish without overpowering it. One night, that experimenting became a recipe with staying power. Pineapplehead Sauce was born, then refined across countless batches until the flavor hit his standard.
